Blueberry Crumb Muffins
¼ c margarine 1 tsp vanilla extract
1/3 c sugar 1 ½ c blueberries
1 egg ½ c sugar
2 1/3 c flour 1/3 c flour
4 tsp baking powder ½ tsp cinnamon
½ tsp salt ¼ c margarine
1 c milk
Preheat oven to 375. Cream ¼ c margarine and 1/3 c sugar until fluffy. Beat in egg. Add 2 1/3 c flour, baking powder and salt alternately with milk, mixing well after each addition. Stir in vanilla and blueberries. Fill greased muffin cups 2/3 full. Mix ½ c sugar, 1/3 c flour and cinnamon in bowl. Cut in ¼ c butter until crumbly. Sprinkle over muffin batter. Bake for 25-30 minutes. Makes 18.
