Cherry Pecan Muffins

1 egg
¾ c milk
2 c plus 2 tbsp flour
1 c packed light brown sugar
1 heaping tbsp baking powder
7 tbsp oil
1 c sour cherries
½ c pecan pieces

Preheat oven to 375. Mix egg and milk in small bowl. Combine flour, brown sugar and baking powder in bowl; mix well. Add egg mixture. Mix on low for 3 minutes. Add oil 1 tbsp at a time, mixing well after each addition. Stir in cherries and pecans. Spoon into 6 large or 12 regular muffin cups. Bake for 38 minutes or until brown. Makes 12.
